"I never know what to do with leftovers after I fix a pot roast with gravy, onion, potatoes and carrots until I found this recipe. I wouldn't really call it a strata because it doesn't have bread cubes in it. Rather, it has a yorkshire pudding baked around everything else. The recipe came from a book called "Marnie's Kitchen Shortcuts" by Marnie Swedberg. The recipe calls for specific amounts, although I tend to throw in whatever amount of leftovers I have."

 1. Just a note, as it doesn't say in the directions, When you put the margarine or fat in the deep-dish 10 inch pie plate and place in a cold oven, then turn the heat to 425 degrees pour the batter into the plate when the oven gets to the 425 mark, that way the fat is piping hot when you pour the batter in.

 2. Outstanding recipe - because I had more pot roast to use than the recipe called for, I used a 13 X 9 baking dish and used 1.5 x the ingredients. I was absolutely delicious.

 3. I had to double the recipe. It turned out perfectly! Normally I make carrots, onions, and potatoes with my pot roast. This time I had made mashed potatoes. So put 3 spoonfuls per row. I baked it minutes longer. It was relish!!! My family thought I worked along time it ;-)

Tweaks

 1. I didn't have potatoes with my potroast so I microwaved a couple small potatos whole and cut then up, un peeled.

 2. An excellent use of leftover roast. I was concerned the middle would be soggy and unpleasant but it wasn't. I added frozen potatoes instead of leftover diced potatoes. I would definitely make this again.

Although I currently live just outside St. Louis, this was the 20th move my husband and I made in the 28 years (at the time of our move) of our marriage. Most of those moves occurred in my husband's 25 year career as a pilot in the Air Force. When he retired 7 years ago, he went to work for Boeing and we both thought we'd go back to Seattle and never move again. Boy were we wrong! But our eventual goal is to end up back in the northwest. I love to read, quilt, and collect cookbooks and recipes. Have I found the right website or what? Pet peeves include people who give low ratings but don't say why and people who rate recipes they haven't tried.
EDITED TO ADD ON Jan. 27, 2007: Well we're here! We made it back to Seattle after what I call The Move From H---! We had major problems on both ends of the move, but the worst things happened here. Less than two weeks after we moved into our new house in Bellevue, a storm blew through and sent two tree limbs through the roof! Our power was off for almost a week, so we ended up moving back into the hotel we thought we had left behind. But we're back in our house now and slowly but surely, it's beginning to feel like home. And on the sunny, warm days, we remember exactly why we've always loved Seattle so much! Our favorite restaurant (Jake O'Shaunesey's) is gone, so we'll have to spend lots of time eating out in search of a new one!

A simple fix for overcooked meat is to dump it in your food processor with some olive oil, purée it, and use it as a stuffing for everything from hand pies and empanadas to dumplings and ravioli.

How do you tenderize leftover pot roast? ›

Simmering in a little bit of liquid or broth is a great way to tenderize. Acidity can also be your friend here. A little bit of vinegar and lemon juice in the liquid can help you tenderize the meat. It adds moisture, but it also cooks the meat.

How do you store leftover pot roast? ›

USDA recommends using cooked beef within 3 to 4 days, kept refrigerated (40°F or less). Refrigeration slows but does not stop bacterial growth.

With lots of connective tissue (also known as collagen), these cuts can be tough if undercooked or hurried along in the cooking process. However, with slow-cooker pot roast, pressure cooker pot roast, or low-and-slow braised pot roast, the collagen breaks up for tender, succulent meat.

How do you reheat roast beef and keep it moist? ›

I would reheat it in the oven on low heat, so as to not cook it further. Baste it with its cooking juice if it is too dry. Cover it with a lid to keep the moisture in.

How do you reheat roast beef to make it tender? ›

Oven: Cover beef with foil and reheat in a preheated oven at a low heat of around 160C for 5-10 minutes. Microwave: Transfer roast and any juices to a microwave-safe dish. Cover with a microwave-safe steamer, and reheat using 30-second intervals on “reheat” setting.

Can you Recook pot roast to make it tender? ›

Low and Slow Heating: If you have a tough roast, you can try simmering it in a liquid (like a beef broth, gravy, or a sauce of your choice) on a low heat. This can help to break down some of the tougher.

How do you keep a pot roast moist and tender? ›

Low and Slow is the Way to Go

Whether you cook your pot roast using a stovetop, oven, slow cooker, or pressure cooker method, you'll always get the most tender and flavorful results if you use low temperatures over a long period of time.

Can I eat week old pot roast? ›

To ensure that your roast remains safe and it continues to taste good, refrigerate the roast in a shallow airtight container or be sure to wrap it tightly with heavy-duty aluminum foil or plastic wrap. Then, you can store it in the fridge (40°F or less) for up to 3 to 4 days.

Can you reheat pot roast twice? ›

If food has been hygienically prepared, cooled quickly after cooking (or reheating) and stored cold, reheating more than once should not increase the risk of illness. However, prolonged storage and repeated reheating will affect the taste, texture, and sometimes the nutritional quality of foods.

Is pot roast good reheated? ›

When I heat up leftover pot roast, I slice the meat and place it in a baking dish. Then I pour the leftover pan juices over the meat, adding extra beef broth if needed to cover. I cover the pan and bake at 325° only until heated through. This helps retain moisture without overcooking or drying out the meat.

How do you fix a tough chuck roast? ›

How to Make Tough Cooked Roast Beef Tender? The best way to make tough beef tender is to add more liquid. It might be too late to do this on Sunday, but when it comes to making another meal with your Roast beef leftovers, cooking the meat slowly in a sauce or gravy is the best way to soften it up.

Why are my potatoes still hard in the crockpot? ›

Insufficient Liquid: If there wasn't enough liquid in the crockpot, it could have caused uneven cooking. Potatoes need to be fully submerged in liquid to cook evenly. Old Potatoes: Very old or stored potatoes can become starchy and may not soften as well during cooking. It's best to use fresh, firm potatoes.

How do you make tough meat tender after cooked? ›

Tenderize a tough roast that's already cooked by pounding it, cutting it against the grain, adding some marinade or commercial tenderizing agents or braising the meat. Reheat cooked beef to at least 165 degrees Fahrenheit to reduce risk of harmful bacterial growth, as advised by the USDA.

How do you use tough leftover beef? ›

Soup is a fantastic option for using leftover beef, and adding barley is a great option if you want to bulk it out. Beef and Barley Soup is great if meat is tough, but it's also a fab way to cook on a budget. Just make sure you cut your beef up small.

How do you deal with overcooked meat? ›

Ways to restore

To use this trick, you may want to start by chopping up the overcooked meat so your jaw doesn't have too much of a workout. You'll then add a little olive oil to your meat to restore some of those juices that escaped. To tenderize it while adding a bit of that bright citrus flavor, use some lime juice.

Why is my roast still tough after 6 hours? ›

Why is my pot roast still tough? It's because you haven't let the collagen break down. Extend the cook time, make sure there's enough liquid and keep an eye on the dish.
